It's back-to-school time, so naturally this month's pancake is apple-cinnamon. Clichés are clichés for a reason. Speaking of which, I have never, in all my years of teaching*, received an apple. I am disappoint.
Anyway, this recipe is from the 2010 Milk Calendar. Because I am adventurous and think that cardamom is one of the best. spices. ever, I added the nutmeg and cardamom. But no pears**.
Confession time: I think I made these once before, but I don't remember how they turned out. I must have thought they turned out well, otherwise I wouldn't have kept the recipe. One would hope. The verdict this time?
Meh. The DC really liked them, but I thought they were a bit doughy and bland. I didn't notice the spices so much. I made these before the Tweed Ride, and they gave us quite a bit of sustenance for the day, so that was good. The recipe says that pouring 1/3 cup per pancake serves 6, with no real indication of how many pancakes makes a serving. I got 12 with heaping 1/4 cup blobs.
I'm a bit disappointed. I really like apples. I really wanted to like these pancakes. I'm thinking that maybe grating the apple is not the way to go here, because you just don't really get the apple flavour. Or maybe I used the wrong kind of apples (Granny Smith)? I think I may have to try a cast iron German-type pancake.
Next September, maybe.
*Which makes me sound ancient. Don't make me hit you with my cane.

That's too bad ... on paper it sounds so delish! I'm a big fan of apples in pancakes though ... esp when the apple chunks are fairly large.
