I've been waiting for 5 months to try this recipe. I figured it would very appropriate for the Christmas holidays. Plus the DC, my official taster, really, really likes gingerbread.
It comes from the 2004 October issue of Real Simple, for a change*. I wasn't exactly sure how to work this, since it calls for 1 cup of pancake mix. Which I'm not buying just for this recipe. I used my basic pancake recipe as the base. It comes from LaVarenne Pratique, which is on my mom's bookshelf next to her Julia Childs.
The verdict?
Tasty. The DC's comment was "Oh, wow." It wasn't really gingerbready enough for me, but I didn't get exactly the right amount of molasses in because my molasses was a bit hard because it's a bit chilly in my apartment. Despite numerous reheatings, I still ended up with chunks of hardened molasses at the bottom of the bowl. I also think we should increase the ginger. My major quibble is that the recipe claims to make 8-10 pancakes at 1/3 cup each. I got a grand total of 5 with heaping 1/4 cup scoops and by scraping the bottom of the bowl. Now, my basic pancake recipe makes very, very fluffy pancakes, so I could probably get away with using only 1/8 c. per pancake, but still!
Anyway, the "vanilla" yogurt (plain yogurt with vanilla-flavoured sugar stirred in)and pears really add to it. The DC found that he could taste more gingerbread with the vanilla yogurt than without.
The batter is satisfyingly gingerbready in colour. I think we just need to tweak the spices.
*I do, on occasion, read other magazines. It's just that I like more of the recipes from Chatelaine, is all. And I no longer take Real Simple. I'll try to branch out when I've gotten through my current recipe stash.
