Pancake of the Month: Strawberry and champagne

The DC had to work New Year's Day, and I thought it would be nice to send him off with pancakes. What better way to use up leftover NYE champagne (or strictly speaking, sparkling wine) than this recipe from Veggie and the Beast. If you have leftover champagne. I had to hoard it carefully or it might have disappeared, but we had just enough this morning for this recipe and two mimosas made from freshly squeezed OJ. Yes, this morning. Sadly, I overslept yesterday and the DC was left pancakeless. He forgave me this morning.

Quite tasty. I forgot to zest the oranges before I squeezed them, so I don't think I got an entire 1/4 tsp in the syrup, and despite my reminding myself not to put the champagne in before I boiled the syrup (which seems to be a habit of mine lately), you guessed it: I put it in first. Oh well. I sloshed some more in afterwards. The syrup is nice and the recipe makes just enough for the quantity of pancakes.

The pancakes themselves weren't as fluffy as advertised, but I don't know if that's because our champagne had gone a bit flat. I'll have to try it again with fresh bubbles. They were tasty all the same, but no real difference from an ordinary buttermilk pancake. The batter was quite a bit runnier than I expected, although that could be because I've been turning my griddle down to 325 instead of 375. 375 on my griddle turns them dark brown really fast, and I like the medium-tones you get at 300-325. At any rate, this temp gave the batter a bit more time to spread out before setting, so there was a bit of melding going on. The recipe says it makes 9 pancakes; I got 10 at 1/4 c. each and probably would have had 11 if I hadn't used part of the batter to do my pancake art.
