It's been a while since I've made a new pancake recipe, so PotM has a lot of catching up to do! Fortunately, there is The Beach.

My friends E & L invite us to their cottage on Lake Huron every year. The only rules are 1) tell them when you're coming and 2) bring food. I always make pancakes, because obviously, so it seemed like a good time to reboot the challenge.* I made Sweet Peach Pancakes from myrecipes.com because a) I like peaches and b) I really like cornmeal in my pancakes. I doubled the recipe because I was cooking for 9.5 people** and used canned sliced peaches because of what I learned last time.

The verdict?
Yum. The recipe claims there is "natural sweetness of the cornmeal;" sweetness must be a relative term because the non-peach part wasn't particularly sweet, but it still gave a really nice texture. They were gobbled up by all. I wound up using 1.5 cans of peaches. The recipe claims you can make 10 1/4 c. pancakes; I got 26.5 at 1/4 cup each -- again, the recipe was doubled, so the original recipe should give you around 13.

Speaking of doubling (oooh, nice segue!), I'll be doubling up on monthly pancake posts for the rest of the year
***. There are five recipes alone in the Rebar cookbook I picked up in Montreal, plus I really need to try Chatelaine's "best buttermilk pancake" recipe to see if there is truth in advertising.

*Also? Rebooting a franchise is the hip thing to do these days.
**Okay, yes. There were 10 people, but toddlers only have half an appetite.
***And since I'm posting this in a timey-wimey fashion I can say that I kept this promise in August but failed spectacularly in September for no good reason. Let's hope October sees an upswing in the pancake thing.
