I really resumed PotM in August with two recipes, but since I've only just now posted them in timey-wimey fashion, I'm not surprised you missed them. In fact, since I'm posting this in a timey-wimey fashion, you may have missed this too.
I picked up the rebar cookbook from a used bookstore in Montreal (thank you very much Heather for the suggestion) and I've been meaning to cook my way through all the pancake recipes. I've had this planned for over a month, lemons and everything, but it's a bit of an intensive procedure so it's taken me a while to get around to it.*
The result?

Wow these are good. Fluffy and seriously lemony. The DC wants me to make them again. And again. And a few times after that. There are a lot of steps, though: zesting and juicing lemons, separating the eggs, folding in beaten egg whites, etc. The batter was really fluffy even before adding the egg whites so I'm not sure that step is entirely necessary. Still, yum. Lots of yum. The recipe says it feeds 3-4 at 1/3 c. each; I got 13 pancakes at 1/4 c.

You're supposed to serve this with fresh strawberries, which would be a really nice accompaniment. I assume. Clearly I will have to try that version. For Science.

Perhaps I will get the sous-chef to do the time-consuming bits, though.
*I was planning to make it for our first wedded breakfast, but we wound up sleeping in and having cereal. #marriedfail
