Although my first pancake love is for the breakfast flapjack, I do collect savoury recipes too. I thought this one would be appropriate, given the time of year.
It's from, surprise surprise, Chatelaine (September 2002). I used canned corn but a red pepper that I grew with my very own hands on my deck. Well, at least I left it to get on with its business on my deck. I even bought fancy cheese from the local cheese shop, which was not at all runny *.
Verdict?
So much yum. I was a bit worried, to be honest, because there's not much to give flavour other than corn, pepper, green onion, cheese, and buttermilk. Okay, so that's rather a lot of possible flavour, but I thought the pancake part might over-power the rest. I am very happy to be wrong. The recipe says that 1/4 c. portions will yield 16-17 pancakes. I got a scant 17 with heaping 1/4 cups.
The next time I make this, which will be very soon, like next week**, I'll make sure to put the full amount of green onion in; I under-onioned this time because I'm not super-fond of them, but they add a really nice smokiness.
They are lovely and moist and not at all floury, which is good considering they are eaten without sauce. It might be interesting to create a light sauce/syrup to add to them. Perhaps something with cheese.
*Neither the shop nor the cheese. The cheeses were Cantenam, I think, and a toscano.
**I do have all that extra cheese to use up.
