What better way to cushion oneself from the snow whirling all-a-flurry outside than by some fortifying fruit and nut pancakes!

I love looking at the reviews for recipes, particularly the ones where someone makes a million substitutions and then says "it turned out great!" That's so not helpful.*
So naturally, this post will be about the various substitutions I had to make to this recipe from Self, January 2012 because I ran out of oatmeal, didn't have sliced almonds, and didn't have sliceable bananas. I did half oatmeal, half oat bran (same difference, right?), chopped almonds (which I chopped even more to make them smaller), and mashed both bananas instead of slicing one. I did use almond milk.
Result?

Tasty. The DC was very pleased. It's a very dense batter that doesn't flow; you have to spread it out with your spoon, and it cooks up very fluffy. You can really smell the almonds when the pancakes are cooking, but I think the extra mashed banana may have over-powered the batter a bit because I couldn't taste them as much. I was also concerned that the middle didn't cook as well, but I think that was banana. I'd like to try this recipe again using the proper ingredients and slicing one of the bananas as stated. And I think a dash of salt might be necessary. The recipe states that it makes 8 5" pancakes; I got 9 from heaping 1/4 c. servings.

Next month will be a bit of a pancake bonanza for me, because in addition to the regular POTM, the month also features my birthday** and The Best Day of the Year***. I may even try my hand at copying this guy****.
*Currently, the first three reviews for this recipe are all substitutions! I particularly like the two where they changed out the flour and oatmeal, skip the nuts, and use vanilla instead of almond extract and soy milk instead of almond milk and are all "tastes great!" One even added agave! Look, I get needing to make adjustments because of flour allergies and so forth, but don't tell us how awesome the recipe is when you've changed all the flavours! Gah!
**No nonad this year. But there will be pancakes. And sushi. Not at the same meal. I hope.

****The dude is a math teacher and pancake artist. Although I find his use of Bisquick batter questionable. I guess whatever works for his art.
