
Friends, it has been over a year since I've had blueberries in my pancakes. This is unacceptable. It wasn't planned at all; I thought I would go on making my usual recipes on non-bloggy weeks, but this has been kind of a not-terribly-good-year on the eating front (stress, thou art a bastard), and the upshot is that I have not had blueberry pancakes in over a year.
This has to stop.
We went to my friends E and L's cottage on Lake Huron again and I brought up the makings for blueberry cornmeal pancakes, including fresh-from-the-farm Ontario blueberries. This is a scaled-down version of the recipe I usually make (from Simply Great Food by the Dieticians of Canada -- it has squash in it and is so very very good).
The result?

They're pretty good, but I prefer my original recipe. I had to make a few without blueberries because my friends' young guest doesn't like blueberries*. I tried one, and it was pretty meh without them. Make these with blueberries! The recipe says it will serve four with pouring scant 1/2 cups. I think there are supposed to be 2 per person. I doubled the recipe and got 14 huge pancakes, but four of those were without blueberries and used up more batter. The batter is quite thick and I think 1/2 c is too big a serving, because even after spreading them out some of the pancakes didn't cook all the way through until I put them in the oven to keep warm. However. The cornmeal gives crunchiness to the pancake, which combined with the fluffiness makes for a nice texture. And blueberries always make things right.

I was hoping to finally get my bathing suit into some water this weekend, but it wound up being too chilly for me, so I stayed fully clothed, playing the ukulele, reading trashy novels, taking walks, and getting ever closer to finishing my Spring Steppes sweater. So close! I may even finish it in time for fall.
*She's pretty awesome in other respects, so as flaws go, I can deal with it. I have hopes it's something she'll grow out of. Because, no blueberries? Seriously?
