Pancake of the Month: Lemon-Poppy Seed

I'm not religious, but the idea of Easter as a sign of spring maybe, finally arriving had me thinking about sunny flavours. This recipe from Joy the Baker (I told you I was probably going to be cooking my way through her blog, but at least it's not Chatelaine again, right?) was just the ticket.

I love the idea of rubbing lemon peel in the granulated sugar. Not sure why, exactly.

These are very, very good. We will make them again. I don't even care that the poppy seeds get stuck in my retainers. Beautifully lemon flavour. They're not particularly sweet, so you need to eat them with maple syrup. Obviously. They are a very fluffy pancake. The recipe says it makes about 24 "small" pancakes (enough for four people); I got 15.25 pancakes using slightly heaping 1/4 c. scoops.

I actually managed to more or less finish a couple of dresses for the #sewDollyClackett sewalong, and I wore one today. Sneek preview:
