Pancake of the Month Bonus #2: Coconut

Apologies for spamming you with blog posts, but I've been on a bit of pancake rampage. A panckage, if you will. I guess I'm trying to catch up on lost flapjack time.

I love coconut. I've had a recipe for coconut waffles for years (but no waffle maker with which to make them), and I don't know why it's taken me so long to look around for a pancake version. This recipe from She Wears Many Hats was dangled in front of me on Pinterest, so I queued it up for this week.

The result?

Meh. I don't know if it was because I used regular milk instead of buttermilk (which, I mean, what was I thinking?) or because I'm just now noticing I used a little too much flour (1.5 c. instead of 1.25), but I asked the DC what kind of pancake he thought it was, and he couldn't tell me. If you knew they were supposed to be coconut, I guess you can sort of taste it, but I want the pancakes to taste the way coconut milk smells. The pancakes are fluffy, and the recipe says it makes 8 (but doesn't specify how big a "round of pancake" is); I got 8 and a bit at 1/4 c.

I might try this recipe again with the proper amounts and see what happens. Maybe a richer coconut milk? But I don't think a recipe should depend that much on the type of ingredients. If I do try it again, I'll tell you how it goes with all that leftover eggnog syrup.
