Pancake of the Month: Strawberry-Vanilla

It is not yet strawberry season, but the DC was swayed by a sale in Chinatown and surprised me with two big containers after a full day of dancing at Swing Goes to the Movies. We easily dispatched the first container by pairing them with vanilla ice cream. But what to do with the second container? Pancakes, natch.

A quick Google search turned up this recipe on Allrecipes.com. Sounds yummy, no? By the by, I especially love the comments about how "that's a heck of a lot of vanilla, so I cut it back to 1 tsp, like in other recipes." Good lord, people. It is a lot of vanilla, but that's sort of the point.

Anyway... the result?

Tasty. They had a really nice vanilla flavour. When they didn't have a yummy strawberry flavour. The comments about the batter being very runny are true. I poured my usual 1/4 cup per pancake for the first ones and got... interesting shapes that more or less ran into each other, and didn't feel like they cooked through. Although that could have been because we chopped the strawberries as directed but probably should have sliced them.

I poured 1/8 cup after that. Much smaller pancakes, but much easier to contain. The runniness is probably the reason these pancakes weren't quite as fluffy as I like. If I make them again, I'll probably go along with the comments that recommend reducing the milk to 3/4 cup.

The recipe says "pour batter into desired size of pancakes" and that the original recipe, wherever that is, makes 8 pancakes. I got four 1/4 cup pancakes and a further ten 1/8 cup pancakes.

By the way, you will have noticed, because you are a clever and observant reader, that the pancakes appear to have been photographed outside. Yes, my dears, it was finally warm enough to dine al fresco. It was terrifically windy on my deck, but the new awning held up wonderfully - despite the fact that the adjustable knots tightened up over the winter and could not be adjusted. The awning billowed up and flapped about. It was a bit disconcerting at times - the DC said he felt as if the entire deck was going to pick up and blow away!

In other news, more challenges! After a few months of failing to take daily pictures, I've restarted the Fat Mum Slim's Photo-a-day challenge -- my problem was that I would never remember to look up the prompts, so this time I've written them on my calendar. So far, so good. Check back at the end of the month for the slide-show. Also, I'm planning to take part in So, Zo's Me-Made-May challenge -- I'm aiming for at least 3-4 days each week of wearing something I have made or refashioned. Which means I need to actually get around to finishing some of those projects I have lying around.

Oh, yeah, and there's that work thing, too.
