
Yeah, it's still winter. I'm a little grumpy about it, especially since the bike lanes are getting that special "drive over the snow and compact it so the bikes can't use it" treatment that I still don't understand.
Anyway, I came across this recipe from Joy the Baker* and had one of those can't-beat-'em'-join-'em moments. Plus? Browned butter.
It was the blood oranges that sealed the deal. I love blood oranges, although I'm not really sure I notice the difference from regular oranges, so I always buy them when they're in season. Which is now. I guess you could say somebody wanted me to embrace winter just long enough yesterday to make these pancakes.

The result?
Oh, wow. Yum. The browned butter is nutty and a nice counterpoint to the citrus (I zested a whole blood orange, which might have been a bit of overkill). The batter is beautifully fluffy. The recipe says it makes enough for two, dropping it two tablespoons at a time; I got seven 1/4 c. pancakes (I split the odd one with the DC). I started segmenting the blood orange, but gave up after a while. I don't mind the membrane so much, anyway.

And pancake day is tomorrow. Almost makes all this snow (more to come later this week! I'm so jazzed!*) worth while.
