
Happy May 2-4, even though we still have nearly a week to go until the 24th. There's nothing lovelier on a holiday than having a nice lazy breakfast. This, naturally, calls for pancakes.
There seems to have been a lot of sugar in these parts lately, so I've been feeling I should get back to whole-grain goodness and make some slightly healthier pancakes. Fortunately, Smitten Kitchen came to my rescue (again) with a link to this recipe. Also, it's given me the opportunity to finally learn how to spell zucchini.
You only get a picture of a partial stack today because I forgot that not only does the DC have to work on a holiday, but he was going in early this morning and so had to dine and dash. No lazy brekkie for him.
The result?

Very tasty. I might add chopped walnuts for extra tastiness. This makes for a super dense batter; I kept thinking I misread amounts because it was so thick. I split the flour into half whole wheat, half all-purpose as suggested, and perhaps only 1/4 c of buttermilk is not quite enough. Because of the thickness, I only made 1/8 c.-sized pancakes. The recipe says it yields 10-12 with 1/4 c, but I only got half that (10 with 1/8 c.). I will say that a serving of three of these 'smaller' pancakes was quite filling.

And now I'm off to enjoy the rest of my holiday. Which will include a tonne of marking. So much for that.
